Almond Crusted Chicken Strips With Homemade Ranch

Happy Saturday!

I’m spending the afternoon reading Orphan Train and listening to LÉON. I highly recommend checking out her cover of Dreams, originally done by Fleetwood Mac.

I’m into making my own almond milk, so I always have leftover almond pulp. I have two different kinds of energy balls in my freezer right now, so I wanted to do something different. I decided on using the dried almond meal as a crust to make some chicken tenders.


Look at that goodness right down there.


Almond Crusted Chicken Strips

1 cup – almond meal*
1/3 cup – parmesan cheese
Garlic Powder
Lemon Pepper
Garlic Pepper

  1. Whisk all ingredients together.
  2. Thoroughly coat chicken strips.
  3. In a large cast iron skillet, add coconut oil (enough to cover the whole pan) and bring to high-med/high heat.
  4. Sear chicken on each side, about 3 minutes each.
  5. Done!


Homemade Ranch Dressing

I’m about to leave on a road trip, so I don’t have a ton of things on hand, so I had to improvise.

1/4 cup – plain keifer
1 tbsp – mayo (I would prefer to use avocado mayo, but I didn’t have any on hand, so I used Hellman’s)
1 tsp – minced garlic
Dill Weed
Dried Minced onion
Garlic Salt
(I didn’t have any chives, but I’d typically add that as well)

Simply mix and adjust to your liking!
